These super delicious (seriously, I ate so many in the past day, someone take them away from me!) whoopie pies scream CELEBRATION!
I mean do we really need a reason to celebrate cake tasting whoopie pies that are pretty pink in color, baked with rainbow sprinkles and then have more sprinkles on the yummy marshmallow creme? Nope, we don’t need a reason. So bake yourself some Vanilla Celebration Whoopie Pies!

Whoopie pies are one of my childhood favorites. Whenever we made weekly trips to the Amish Market I would beg Mom and Dad to spoil me with a whoopie pie for the trip home. These Whoopie Pies taste just like I remember as a kid, they pies are soft and taste like cake. The cream inside is made up of powdered sugar, butter and marshmallow fluff so it’s rich tasting, sweet and very addicting (it’s my favorite part of a whoopie pie!).

How to Make Whoopie Pies

I add in a touch of pink food coloring (the color I use is “Rose”) and stir around the dough. Start off with a small drop of food coloring first and then add more if you want the color to be more vibrant. To shape the pies I use a handy whoopie pie pan, but you could also just put the batter on a cookie sheet. I really love this pan because the pies slip right out.

After you make the marshmallow creme and lick the spoon clean, then add some to a pie, sandwich with the other side.

Where can I get a whoopie pie pan? Many department stores or online stores that have kitchen sections will sell them too.
What color food coloring did you use for these? I used 2 drops of “Rose”.
Can I make the whoopie pies a different color? Sure, just add that color food coloring instead of pink.
What’s the best way to store these? You can put in a plastic container or wrap individually with plastic wrap. I’ve also had success freezing them in freezer bags.

- ▢ 1 cup white sugar
- ▢ 1/2 cup butter - softened
- ▢ 2 eggs
- ▢ 1 teaspoon vanilla extract
- ▢ 1/2 teaspoon salt
- ▢ 1 1/2 cup flour
- ▢ 2 teaspoons baking powder
- ▢ 1/2 cup milk
- ▢ 1-2 drops of pink food coloring
- ▢ 1/2 cup rainbow sprinkles
For the filling
- ▢ 1/2 cup butter - softened
- ▢ 1 cup powdered sugar
- ▢ 1 cup marshmallow creme
- ▢ 1/2 teaspoon vanilla extract

Instructions
For the pies
- Preheat oven to 350 degrees. Spray baking sheet or whoopie pie pan.
- In a bowl use a electric mixer to combine sugar and butter. Add in eggs one at a time.
- Next add vanilla and salt and continue to mix for a few seconds.
- Add flour, baking powder, milk and food coloring and keep mixing until you’re left with a nice batter consistency.
- Add in rainbow sprinkles and stir with spoon.
- Drop the batter by big tablespoons onto baking sheet or fill up whoopie pie pan. If using a baking pan, leave 2 inches between pies as they will grow.
- Bake 12 minutes, until slightly brown on the bottoms.
- Remove from oven and let cool.
For the filling
- In a large bowl, blend together all of the ingredients until smooth.
- Spread marshmallow filling on one pie, while using another pie to press it down.
- Over a plate, take a small handful of sprinkles and sprinkle on top of your filling around the entire pie.
- Enjoy.
