I love everything and anything cake batter, so it’s no surprise that I’m absolutely obsessed with these super fudgy Confetti Cake Batter Brownies. If you’re a fan of funfetti desserts, sprinkles, or anything that tastes like a slice of birthday cake, you are going to fall in love with these bright, chewy, sprinkle-filled bars.
This recipe starts with a simple box of confetti/funfetti cake mix, plus a few basic pantry ingredients, to create the best fudgy funfetti brownies ever. Some people might call them blondies—and honestly, you can —but to me they’re vanilla brownies at heart. Or… albino brownies, if we want to be dramatic. The blondie vs. brownie debate runs deep online, but I think we can all agree that these funfetti dessert bars are delicious no matter what we call them.

How to Make Fudgy Birthday Cake Brownies
Use a boxed cake mix for these brownies—either the Funfetti or Betty Crocker Confetti variety works perfectly. I used the Confetti mix, but they’re essentially the same thing and both give you that classic sprinkle-filled flavor.

Mix cake mix, oil, egg and milk together in a mixing bowl .

Add your white chocolate chips and rainbow sprinkles . The white chocolate chips are what helps make them so moist and fudgy so don’t skip them!

Mix until sprinkles and chocolate chips are fully combined in the batter.

Pour into baking dish and bake for 25-30 minutes. You want to keep them in the oven just until the edges are very slightly brown. This takes around 25-30 minutes, mine took 26 minutes to be very exact. The time and dish size is important in making them fudgy!

And soon these gorgeous cake batter brownies will appear! Let them sit for 15 minutes so they can set in the dish. If you cut them too early, they might fall apart. I know it’s hard to resist.
