Slow Cooker Shredded Chicken and White Bean Soup
There’s nothing quite like a warm, hearty bowl of soup to make winter feel a little cozier. As someone who adores bean soups, this Slow Cooker Shredded Chicken and White Bean Soup has become a staple in my kitchen during the colder months. Alongside my favorites like Crockpot Swiss Chard & White Bean Stew and Kale, Bean, and Potato Soup , this recipe offers comfort in every spoonful.
Packed with tender shredded chicken, creamy white beans, and a medley of vegetables, it’s the kind of meal that warms you from the inside out. The best part? It’s incredibly easy to make—just toss the ingredients into your slow cooker and let it work its magic.

Cooking Tips
- Dry Beans for the Win : Using dry white beans not only enhances the flavor and texture but also makes this meal budget-friendly. No need to soak them overnight; they cook beautifully right in the slow cooker.
- Fresh or Canned Tomatoes : If you have canned stewed tomatoes from your garden, this is a perfect opportunity to use them. Otherwise, store-bought canned tomatoes work just as well.
- Vegetable Variety : Feel free to add other vegetables you have on hand, like chopped kale or spinach, to boost the nutritional value and add more color to your soup.

Storing Leftovers
This soup stores wonderfully, making it great for meal prep or enjoying throughout the week.
- Refrigerator : Store it in an airtight container in the fridge for up to 4 days.
- Freezer : For longer storage, freeze the soup in individual portions. It will keep well for up to 3 months. When ready to eat, thaw overnight in the refrigerator and reheat on the stove or in the microwave.
Whether you’re looking for a comforting dinner or a nourishing lunch, this Slow Cooker Shredded Chicken and White Bean Soup is sure to satisfy. Enjoy!

Ingredients
- ▢ 2 large carrots peeled and diced
- ▢ 4 stalks celery chopped
- ▢ 1 small onion peeled and chopped
- ▢ 1 pound dry white beans
- ▢ (1) 28 oz can stewed tomatoes
- ▢ 1/2 teaspoon ground pepper
- ▢ 2 bay leaves
- ▢ 1 teaspoon dried rosemary
- ▢ 1/2 teaspoon dried thyme
- ▢ 1 teaspoon paprika
- ▢ 6 cups chicken broth
- ▢ 1 pound chicken breast uncooked
Instructions
- Add all of the ingredients into the crockpot, stirring to completely mix.
- Cook on LOW for 8 hours. After 8 hours, remove the chicken and shred on cutting board with fork and knife (the chicken should just fall apart). Add chicken back to slow cooker and give it a stir. You can stir right away, but I like to let it sit in the crockpot for 30 more minutes to soak up the broth while I get the dinner table ready.
- Serve in bowls and serve. I love mine with a little Parmesan cheese on top.
