Quinoa Stuffed Bell Peppers Recipe
If you guys haven’t noticed, I’m kinda a Stuffed Pepper fanatic. I’ve shared my favorite Stuffed Pepper Casserole , (heck, I even made special Halloween Stuffed Peppers ) but sometimes I like making them a little more vegetable friendly. Instead of the usual ground beef, we’re using quinoa and kale. At the end we smother them in mozzarella cheese, because it’s a must have for Stuffed Bell Peppers.

Verdict? My entire family loves them, including my husband who always wants meat for dinner! You need to add them to your dinner menu to try!

Ingredients You Need
- 4 large green bell peppers
- 2 cups vegetable broth
- 1 cup quinoa
- 3 cups kale
- 2 cups tomato sauce
- 1 cup shredded mozzarella cheese

Why Do I Use Quinoa?
Quinoa is a great alternative to meat in lots of dishes. It has a heartiness to it so it fills you up. I use quinoa instead of rice because it provides twice the protein and more fiber. It also hopes “hold” meals together, like for example these Stuffed Peppers, Vegetarian Quinoa Burgers , or I often use it to make Vegetable Meatloaf with.

How to Make Them Vegan
Want to make them vegan? Ok. This recipe is ridiculously easily to make vegan, all you need to do is remove the cheese from the recipe (or use a vegan shredded cheese ), and just like that – Vegan Stuffed Peppers!

Ingredients
- ▢ 4 large green bell peppers seeds removed and tops cut off
- ▢ 2 cups vegetable broth
- ▢ 1 cup quinoa uncooked
- ▢ 3 cups kale chopped up
- ▢ 2 cups tomato sauce
- ▢ 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 350 degrees.
- Place 4 peppers in casserole dish, standing them upright.
- Bring 2 cups of broth to a boil in a pot with a tight-fitting lid. Add 1 cup quinoa and return to a boil. Cover, reduce heat to low and simmer until liquid is absorbed, about 15 minutes. Remove from heat, fluff, cover, and let stand for about 15 minutes.
- Add cooked quinoa into large bowl. Add kale and 1 cup of tomato sauce to quinoa and mix.
- Fill each pepper with quinoa mixture. Pour remaining 1 cup tomato sauce evenly over the peppers.
- Cover peppers in casserole dish with aluminum foil. Bake for 25 minutes.
- Remove aluminum foil, sprinkle mozzarella cheese on top of peppers and bake for 10 more minutes. Enjoy!
