Roma Tomato Sandwich

I love Summer sandwiches made with vegetables straight from the garden. Tomato Sandwich, yum! Cucumber sandwich , onion sandwich (husband’s fav), green tomato sandwich – yum!

Let’s just get one thing out of the way right now. This toasted sandwich does not have mayonnaise on it – no way. Instead, we’re keeping it fresh and crunchy with a drizzle of olive oil on top of the juicy tomatoes. Trust me, you’re going to love it!

During the Summer, I eat this almost daily for lunch next to some kettle potato chips, and a half sour pickle . Sometimes at night, you can find me eating a “kitchen sink tomato sandwich” too. You know what I mean, you roll up your sleeves, and eat it over the kitchen sink, letting the tomato juice run down your fingers? Yum, what a Summer time favorite, can you just feel the warm sun on you?

Garden Tomatoes are Best

Fresh roma (plum) or beefsteak tomatoes from the garden are best for this sandwich. So head to your garden or farmers market to grab a couple!

How to Make a Tomato Sandwich

Spread butter on both sides of bread. This is just like making a grilled cheese sandwich.

Heat a nonstick pan over medium heat and cook until both sides are toasted.

Remove from pan and place on a plate, ready to prepare your sandwich! One one piece of bread add basil and tomato slices.

Drizzle a little bit of olive oil on top of the tomatoes. Now add some mined garlic, spreading it around on the tomatoes, followed by a sprinkle of salt and pepper.

Add the other piece of bread on top, pushing down, and then eat this delicious tomato sandwich! Enjoy!

What else can I add to tomato sandwiches?

  • Slices of avocado – this is one of my favorite additions!
  • Arugula or Lettuce – Use arugula or lettuce on the base instead of basil.
  • Onion – Add slices of fresh yellow or pickled red onions on top.
  • Lime Juice – add a light drizzle on top with the olive oil. This gives it a slight tart taste.
