Pop-out to your garden and grab some fresh tomatoes! There’s nothing like fresh tomato rice soup. If you don’t have access to tomatoes, store-bought tomatoes will work just fine.

To make this deliciously comforting soup, you’ll need:

  • Olive oil
  • Minced garlic
  • Onion
  • Celery stalks
  • Carrot
  • White rice
  • Fresh tomatoes
  • Chicken broth (you can use vegetable broth if you prefer)
  • Salt and pepper
  • Fresh basil

Once you have your ingredients together, you’re ready to start cooking!

First, heat up olive oil in a large pot (I love this soup pot !). Once heated, add garlic, chopped onion, celery, and carrot, and cook until the garlic is fragrant and the vegetables soften.

Add uncooked rice, tomatoes, chicken broth, and a sprinkle of salt and pepper to taste.

Bring to a boil and then reduce heat, cover and simmer until rice is fully cooked.

Don’t have fresh tomatoes? You can use (2) 15 oz cans of diced canned tomatoes.

Don’t want to use white rice? You can use brown rice or even orzo pasta instead.

We prefer it chunky, but if you want it more smooth, use an immersion blender or regular blender to blend until desired creaminess. You can even add a little bit of cream if you want!
